Step 1:

Use the photo of yourself.

Desaturate is found in the top menu.

DON'T use the polygonal lasso. Instead use the lasso tool. Include the neck and any skin showing. Right click in the selected area to find "layer via cut". Right click on the new layer to duplicate it.

Step 2 and 3:

The word "color" is a link. It shows the Hue/Saturation menu.
